9 ingredient GF and dairy free brownies...perfect for that cheat item once a week!
Ingredients:
2/3 cup of “Enjoy Life” semi-sweet chocolate chips melted
5 tablespoons of “Spectrum” brand Unrefined coconut oil
2/3 cup of Coconut Sugar (Organic from Walmart)
2 whole eggs
1 teaspoon of GF vanilla extract
2/3 cup of “Nature’s Eats” brand almond flour
2 tablespoons of Hershey’s unsweetened Cocoa Powder
1/2 teaspoon of baking powder
1/4 teaspoon salt
PLUS- 1/3 cup of “Enjoy Life” brand chocolate chips mixed in
Instructions:
Preheat oven to 350 degrees
Use and 8x8 baking pan or a round cake pan (smaller if you want them thicker)- you will have to cook longer time if you pick thicker- 24 min
Melt the chocolate chips and coconut oil over low heat (or use microwave on low heat), remove and set aside.
Put sugar and eggs in a bowl and whisk together (I shake the eggs in a jar first to make them and the brownies fluffier), set aside.
In a second bowl, whisk together the dry ingredients (almond flour, cocoa, baking powder and salt)
Add the contents of the saucepan to the sugar and egg mix and whisk until smooth, stir in vanilla.
Add dry ingredients to the above bowl and whisk in until smooth.
Add in additional (non-melted chocolate chips)
Bake at 350 degrees for 20-24 min, do not over-bake (here in Colorado at 7800ft using the circular cake pan I cooked mine for 21 min and they were perfect).
